Mmmm, my mouth is watering all over again. I made the best smoothie y’all.
It’s like one of those cheating smoothies where there is a lot of sugar and junk, but like, it has banana so it’s *totally* healthy.
And, you know, peanut butter is *totally* full of healthy fat and stuff.
Greek yogurt? Good.
Chocolate frozen yogurt? Eh, at least it’s better than ice cream.
I could rationalize eating a rubber tire if I had to.
I said IF I HAD TO PEOPLE, I’m not THAT weird. *Gosh.*
Anyhow, so a couple months back I spoiled myself with a Vitamix blender. Totally worth it.
I need to experiment or like actually open the binder and read some of their suggestions because I’ve *only* made fruit smoothies and milkshakes in it. *heeheee*
And it’s always the same 3 smoothies.
So this smoothie is like, the bomb. Have y’all ever oats in a smoothie or milkshake?
Oats lower cholesterol, you know! I’ll bet you could totally sneak them into your child’s milkshake and they wouldn’t even notice.
Ground up oats of course.
The Vitamix does a spectacular job at that.
I wonder what my grandmother would have done if she had a Vitamix? Made her own liquid hand soap?
Done! I’ve done that, but not in the blender, on the stovetop. That post I found on Pinterest. Love. That girl is in Texas too, Brenham, home of Blue Bell Ice Cream, so you know, we like have to stick together.
And on another note, I had to share my nuts. (insert immature laugh here)
Taylor got a whole lot of rain this year, *praise be!*, but it ruined all our pecans. We have FOUR HUGE pecan trees on our tiny little lot, and they’re all ruined! Or ruint, as my ole Grandma used to say. All moldy and soft and gross inside. EVEN THE SQUIRRELS don’t care for them.
*GAAAHHHH* Read my adventure with the squirrels here. Maybe I’ll stockpile a whole bunch of my RUINT pecans and give them to those little buggers this spring. Ugh.
SOOOO, back to my story, I made my last trip to Alpine, 6 hours west, for my last in-person GRAD SCHOOL CLASS!!!! AAGGHHHHHH HAPPY DANCE!!!!!! I still have 2 classes left, but they’re online, and then I’ll take the state test to be a Licensed Professional Counselor.
Whoa. Like a real, grown-up job.
I already miss teaching, but I think I might have an upcoming job opportunity to still be working with kiddoes, I’ll keep you posted.
So, some classmates and I rented a house from a professor, and my last weekend there, he said “suuuure, take all the pecans you want! I got two big ol’ grocery sacks full.
And guess who can’t find her nutcracker now. Ugh.
Pecans are kinda a big deal in Texas. Like any good Texas woman has gallon ziploc bags in her freezer full of pecans, years old, like vintage wine. But they keep forever! I’m finishing up my bag of ’07 now.
And once you see how long it takes to crack and shell all those suckers, you’d make ’em last as long as you could too. Ha.

Chocolate Peanut Butter Banana Oat Smoothie
Yield: 1 smoothie
1 cup vanilla almond milk
1 whole banana, frozen
2 tablespoons peanut butter
2 tablespoons chocolate frozen yogurt
3 tablespoons Chobani vanilla greek yogurt with chocolate chunks
1/4 cup rolled oats, uncooked
Place all ingredients in blender, liquid goes in first! Blend 60 seconds, or until smooth. If using a fresh banana, ice cubes may be added to thicken the smoothie.
