You read right. Yankee Salad. I call it that because my good friend from Iowa, well, she’s a Yankee.

Bless her heart.

Luckily, some good sense kicked in and she married a Texan, and got down here just as fast as she could.

Now, she makes hers with Butterscotch pudding, but I was having a hankerin’ for pistachio, so I switched it up a bit.


There are millions of variations of this on the inter webs, so feel free to experiment and let me know what you like.

Vanilla pudding, cheesecake pudding, butterscotch pudding, banana pudding, snickers, payday, milky way, apples, pineapple, cherries, nuts, no nuts…

Did I Forrest Gump you yet?


One final word:

It seriously serves a million.

Ok, not a million, but at least 546,789.2

Most people are not like me, who eat it for breakfast, then as a snack, then a scoop before bed for good measure. If it’s one little scoop on the plate at your next picnic which already has 23 competing sides, it’s going to go a long way.

But, my friends, it will be the favorite.

Yankee Snickers Salad

Yield: serves 10


1 - 3 oz. box of Jell-O pistachio flavored instant pudding
1 1/2 cups milk
1 - 8 oz. tub of Cool Whip, defrosted
3 or 4 Snicker's bars, chopped
3 medium Granny Smith apples, chopped
1 cup chopped pecans
1 cup mini marshmallows


In a large bowl, whisk Jell-O mix with milk. Allow to set up 3-5 minutes. First, fold in Cool Whip, then carefully fold in the remaining ingredients. Refrigerate one hour, then serve.
