  2. 1/2 cup of greek yogurt;

  5. 1/2 teaspoon of cinnamon;
  6. 1/2 cup of regular/almond or oat milk, preferably almond;
  7. 2 teaspoons of baking powder;
  8. 1/2 teaspoon sea salt.

Of course this plump pie is vegan, flourless, sugar-free and despite everything delicious. It’s not very fast to cook it but still quite easy.

Be sure it is worth the time you are going to spend. It will melt in your mouth and will definitely want to repeat it.

Plums are one of the most antioxidant richest foods in the world. And they are kind of cheap.

Here is the recipe:

  1. Cut the plums and sauté it in a pan with coconut oil for 5-10 minutes until soft.
  2. Grind oats into oat flour for the crust. You can put anything you want into the crust.  I added oat flour, dates, walnuts, cinnamon, coconut oil and some water. Mix until you get a crumbl dough that sticks together.
  1. Leave 3/4 parts to make the crust and 1/4 to make the topping crumble.
  2. Spread the dough in the form, like you do for regular pie.
  3. Add layer of plumps and then layer or crumple on the top.
  4. Bake for 20-30 minutes until the crumble gets brownish. And it’s ready to eat.

Chocolate Zucchini Cake

No you can’t taste or see the zucchini, but it will be so delicious you won’t forget it any time soon. Also thanks to zucchini it’s very moisturised inside. What you will need:

  1. Flour.
  2. Cocoa powder.
  3. Baking powder.
  4. Oil.
  5. Sugar.
  6. Eggs.
  7. Sour cream.
  8. Zucchini.

Mix dry ingredients in one bowl and wet in another bowl. Then combine both. Put it in a cake form and bake for 30 minutes at 180 degrees. It’s the best way to eat vegetables!

This is a perfect idea for a snack, especially in summer. So refreshing and yummy. This recipe is so simple:

  1. Add yogurt, honey, cream cheese and vanilla. Mix it.
  2. Spread it in a baking pan.
  3. Top with berries and coconut flakes or any other fruits you would like to.
  4. Freeze.
  5. Cut and enjoy!

  1. Preheat the oven to 180°C .
  2. Add all the base ingredients to the mixer, mix until combined. Press mixture into a lined tart tin. Ingredients: 1 cup of almond flour, 110 g coconut sugar, 80 g plain flour, 65 g of neutral flavoured oil, tablespoons of cocoa, pinch of salt and bake the base for the cake for 10-15 minutes.
  3. For the avocado mousse filling you will need 2 medium size avocados, 200 g of vegan chocolate, 25 g of cocoa powder, pinch of salt and 100 g of sugar on your choice
  4. To make the avocado filler melt the chocolate and add all the other ingredients. Process 2 minutes until everything is combined. You can add a bit of milk to soften the mousse.

When the base is cold fill it with mousse and put it in refrigerator for 4 hours. Decorate it with any fruit or berries you have at home and enjoy!

Healthy Banana Bread

This recipe is so plain and requires the ingredients we always have at home. This banana bread is naturally sweetened with honey and syrup.

For the oil choose virgin coconut oil, extra-virgin olive oil or vegetable oil instead of butter.

You can choose flour that you prefer. This recipe is quite flexible.

  1. Preheat the oven to 165°C .
  2. In a bowl mix together 160 g of honey and 70 g of oil. Then add 2 eggs and whisk it. After adding 2 mashed bananas and 50 g of milk.
  3. Add 1 teaspoon baking soda, 1 teaspoon vanilla extract, half of the teaspoon of salt, half of the teaspoon of cinnamon.
  4. Put the batter into your greasy bread pan and bake for 55 minutes.

Viola, your healthy banana bread is ready.

Frozen Raspberry Layer Cake

This cake is ideal for any summer celebration. It’s not difficult yet time-consuming. But be sure, the result is worth all the effort.

The ingredients are very simple: 2 frozen pound cakes, 3 cups vanilla ice cream, 4 cups raspberry sorbet, 1 pint fresh raspberries, 3 tablespoons of Chambord.

  1. Trace and draw a 9 in. diameter round onto a piece of paper. Fold the paper in half so that the crease lines up with the edge of the pan. Unfold the paper and place it on top of the pan. Use tape to attach the paper to the pan.
  2. Cover the bottom of the pan with one layer of cake slices and spread the ice cream over the cake. Freeze until it hardens, about 20 minutes. Then put 2 cups of sorbet over the ice cream followed by one more layer of cake slices. Put the cake in the freezer for 10 minutes.
  3. Mix the Chambord liqueur and the raspberries together in a bowl. Put the berries on the top of the frozen cake and cover with one more layer of sorbet.
  4. Freeze at least for 3 hours and the cake is ready. Bon appetit!

Chocolate Vegan Crepe Cake

This is a recipe for cake with many layers of chocolate crepes filled with sweet coconut whipped cream and dark chocolate and all vegan.

Instruction:

  1. Put the flour, cocoa powder, maple syrup, vanilla, salt and almond milk into a blender and blend together.
  2. Prepare the pan and use this batter to cook crepes. Cook each crepe for 4-6 minutes.Flip and then cook for 1-2 more minutes.
  3. Open the coconut milk cans. Whisk them in a blender until light and fluffy and add stevia.
  4. Use the cream to spread it between layers of crepes. Top with melted chocolate and it’s ready!

This dessert takes just 5 minutes. Can you imagine? Super fast. This is what you need to do:

  1. Preheat a pan to high temperature.
  2. Cut the peaches in half. Place them on a dish and top each with 1 tablespoon of brown sugar.
  3. Fry for about 5 minutes, until caramelised.

You can add different toppings on the top of these roasted peaches. Honey, syrup, roasted nuts or vegan whipped cream, anything would taste delicious!

This mini healthy cheesecake recipe is amazing for a quick healthy snack that you can make in 15 minutes! There are just 7 ingredients you need for this cakes:

  1. cottage cheese or cream cheese
  2. vanilla
  3. honey or stevia
  4. almond butter
  5. coconut flakes
  6. flax meal
  7. cinnamon

Cottage cheese, vanilla and honey were blended together until creamy and smooth. Then mix the rest of the ingredients in a bowl.
